This seems like it could be solved through land records. Someone owned the land, someone dug it, someone built the brick structure. It must be recorded somewhere?? I'm wondering if it could have been a monastary that never got finished. In Europe monastaries were often labyrinthine type structures with underground hallways. Your idea is a good one if anyone can find land records. Maybe the OHSM has them.
