I don't think I've seen anyone post this information yet; forgive me if I'm duplicating stuff. The Ontario County Records and Archives Center (RAIMS) has the NY state census records available. They also have indexes, broken down by township, for the years 1850-1875. I haven't ordered any census records yet, but have found Mary Jo Lamphear (main contact) to be very helpful with probate records, etc. I live in Denver and can't get to Ontario very often and have found this to be a great way to locate information. I can find a bunch of things on their indexes and make requests for specific documents.
