Yes, Deerfield still exists as a town, immediately north of the City of Utica. You won't usually find New York towns shown on most maps because they are areal units rather than populated centers. You need either a topographic map (DeLorme's New York Atlas & Gazetteer for example) or a county map to see town boundaries. There is also I believe a section of the City of Utica on the north side of the Mohawk River which is also called Deerfield. My map shows a St. Peter's School there. So you might want to look within the City of Utica rather than the Town of Deerfield. I would suggest picking up an Oneida County map once you arrive.
