When it solidifies I can use it sparingly to add to other recipes that need a bit of spicing up. I know that sounds like defeating the original purpose of draining it off in the first place. However, it would appear that we all add the extra fat again somewhere anyway... as a side dish I had an ear of "fresh" corn slathered with butter and salt.
