I seem to recall that the NYC Municipal Archives has a collection of every building in the city taken around the turn of the century. There was a good deal of discussion about it on this list about 5-7 years ago and then I unsubscribed for awhile. Anyway, prints of those photos were available at that time for about $25, as I recall. Trying googling something like: +map +manhattan +1875..1900 and see what that turns up.
