If the database re the Jefferson county 1850 census is just an index they might very well still be in the census they were just missed by the indexer. If the database is the entire contents of the 1850 census is the full census as it then existed then your ancestor may still have been there , and if they were, they were just missed by the census taker, or recorder. Happens all the time, that people are missing from where they are known to have been because of human error. Go read the census!
