Wilson started the company in 1976 in Cattle Baron Restaurants, Inc. was founded in Portales, New Mexico in 1976. Today there are eight Cattle Baron Restaurants, including one in Las Cruces In addition, Wilson founded Farley's Food, Fun, and Pub, which also has a Las Cruces location, and Tia Juana's Mexican Grill and Cantina in Roswell and Hobbs.
