Another source of information on non-owners can be the non-population tax schedules. Although my ancestor only owned land for about ten years of his adult life, he did farm, and his farm production appeared in the agricultural census. I still don't know where the farm was, but I do know what he raised or grew. If the census taker went in order of the properties, I should be able to locate him generally relative to the nearest land-owner. Lots of work, and I haven't done it yet, but it should work.
