    3. Greetings Everyone, Got a message from Jerilyn today and she said how much she liked Chicken and Dumplings. I do too. It reminds me of my great grandmother's (Sarah Mitchell Keen of Salem County, NJ) Chicken Pot Pie. She would always serve Fordhook Lima's and Silver Queen Corn on the side. I guess people call that succotash (sorry for the spelling). Back then when we went down the street to the Griscom's farm and their produce stand they always had Fordhook Lima's. Now aday's they are hard to find except frozen in the grocery store. Boy are they expensive. They seemed to be more popular in New Jersey (or at least my part of NJ) Than they are here in the South. I found a Chicken and Dumplings recipe in the "Salem County Cookbook---1963" I thought I would share it with everyone. This is dedicated to Jerilyn . ENJOY-----------Everyone else too. Chicken Pot Pie 3-4 lbs. of chicken salt and pepper onions 4 cups all purpose flour 1 tsp. salt 2/3 cup of shortening Cut chicken into serving pieces and cook in large quantity of water (5-6 qts. Water) seasoned with onions and ample salt and pepper, until done. Remove from broth and keep warm till ready to serve. Mix together flour, salt and shortening . Add enough water to make a soft dough, but not sticky. Roll thin. Flour well. Cut in 2" squares. Drop into well seasoned boiling chicken broth. Cook, covered, 20 min. or until done. Serves 8 - 10. Yum Robin,that recipe will go into my cooking achieves.It should be as good as the Salem Oak Diner's meal I had at noon today.The pot pie gravy was very yellow.I think it must have had some saffron in it too. When I was a child,my grandparent's would take us to Sunday dinner at that diner .Afterwards we would browse through all the graveyards looking for ancestor's stones.Guess that is how I got my penchant for genealogy. To everyone else on the list,a friend and I went to Salem today [in the pouring rain I might add] to dig into our Salem County genealogy at the Courthouse.I found the marriage record of my 5th great grandparent's David Willis,and Mary Harwood from 1804.Most likely Bruce Willis is a shirt-tail cousin! Robin,what other great "Down Jersey "recipes are there in your Salem County Cookbook? Any for crabcakes,corn fritters,or other seafood dishes? Do tell! I have over 300 cookbooks in my kitchen library,but not the Salem County 1963 one. Jerilyn ,who is still drooling over the wonderful taste the potpie from the Salem Oak Diner.
