I hope someone more knowledgeable than I will answer, but I *think* that "cows" means total #, and the 3,2, 1 yr old are just sub-categories for the ages of the cows. Same headings also found for horses. The categories in the inventories for the New Boston Town Records (1800 - 1820?) I'm researching are Polls, Orchard.
