    3. Howdie - I would have to say that this dish, in some form, plus or minus, is probably not ethnic specific. In the end, it would be a simple matter, even in a controlled society under the feudal system, for the poorest of peasants to "harvest" the seeds of one cucumber and the seeds of one onion. The same would hold true in most common vegetable staples I would surmise, then the ethnic societies would vary forms of consumption eventually finding a dish that most seem to like. So, in a way then, some of these recipes work their way towards "National Dish" status. Cucumber Dish Variant ~ Slicing cucumber Mild onion Dill Soy sauce Apple cider vinegar Peel cucumber and onion, slicing both a little thicker than normal. In a non metallic bowl mix them together then add dill. Cover them with a mixture of 1/2 Soy sauce and 1/2 Apple cider vinegar. Let stand in refrigerator for a few hours. If you like this dish, as is or in a varied form, you can make enough for a gallon jar and keep in the fridge over the winter. Lay a common cellophane sandwich bag across the top of the jar, then put the jar cap on. You can get a gallon jar from almost any restaurant or fast food place free. They buy stuff in bulk and when empty, they just throw the jar away. I have begun to see how many of the Polish families are interwoven, both closely and far-ly? lol It would be quite an undertaking. I know who would be best at it, but not going to volunteer them......since one of them is deeply involved in a find a grave project right now. > > The cucumber dish is one of my favorites and we just had it as Easter. Never tried it over potatoes though. hmmmm! Interesting that people from the Nordic nations also like that dish. KathyB > > ____________________________________________________________
