First of all, please note the first rule of thumb would be to check the flyleaf of the book - this is the area that gives the name of the publisher and a little bit about when the book was published - check to see if it says something to the effect: "No part of this book can be copied, etc., etc., without express permission from the author." If it does not state that, more than likely you can use it without fear of getting fined. I would never copy even a line without giving the cite. Several years ago, the Catholic Church in America was sued by the Copyright people for photocopying music from various sources and using it for their services. Because of this, our Catholic diocese in Southern California (maybe all of the Catholic churches in America did it) began collecting hymns, responses, collects, etc., and published their own hymnal. We were asked to teach parishioners these songs at each service. Our particular parish had a lot of old line folks who preferred not to sing, but delighted in hearing me sing songs like "Amazing Grace." I had to walk up and down the aisles urging people to sing along with me (our mass was a guitar mass). I had to promise them I would sing "Amazing Grace" once a month if they would just sing along.
