Folks, Recently I've been cleaning out my bookshelves, rearranging files and that sort of thing and while I was working in the Hyde census records I came across the 1880 Hyde census which was lovingly transcribed by Caroline Jarvis Coats from microfilm. When she would get one township done she would make a copy and send it to me along with an old recipe handed down in her family. Caroline died earlier this year of cancer and is sorely missed as one of our volunteers. Seeing these recipes saddened me to think that they would be tucked away in the recesses of my files never to be seen by anyone else so I've decided to share one or two of them with you. Forgive me for doing this on the list as I know it doesn't have anything to do with genealogy but thought that we could all remember Caroline by having these little bits of her memories of her ancestors. I hope you all enjoy them. Kay Lynn ----------------------- TWO OLD CHILI SAUCE RECIPES Great grandmother Caroline (York) Brown, born 1824 in Massachusetts, handed the following recipe down to her only surviving child, Clara Newhall (Brown) Turnbull, born in 1850 in Massachusetts. 1/2 peck tomatoes, scalded & peeled 6 medium onions Cook until well done and then add 1 cup of sugar. Mix together in a small bowl the following ingredients: 1 Tablespoon cinnamon 1 Tablespoon allspice 1 Teaspoon salt 1 Teaspoon pepper Stir this mixture into tomatoes and cook until thick. Grandmother Clara (Brown) Turnbull added to the above recipe and passed it along to my mother, Carrie (Turnbull) Jarvis, born in 1884 in Illinois. The following is the recipe mother "put up" in Mason jars every year. 18 ripe tomatoes, scalded & peeled 2 onions, chopped 3 green peppers, chopped 1 cup sugar 3 Teaspoons salt 1/2 Teaspoon cloves 1 teaspoon each of cinnamon, allspice & nutmeg Cook tomatoes, onions and peppers together until tender then add sugar and spices. Cook about 10 minutes longer. Stir hard until well mixed. I remember peeling tomatoes until I never wanted to see another one, but as soon as the chili sauce was done. I could hardly wait until the biscuits came out of the oven to eat with the chili sauce. I still use Mother's recipe but freeze it instead of canning. I don't remember how many pint/quarts this recipe makes because I freeze it in different size containers. Try it--you'll be glad you did! Caroline Jarvis Coats Venice, Florida
Kay, Thank You. Alas, how brief the time we have together. Caroline sent me the 1880 for all Hyde townships except Currituck. And, she sent me a bottle of Wilbur's Barbecue Sauce (Goldsboro, NC), after I had been complaining that you can't get any decent BBQ in Maryland, with a real bite -- it is all sweet and tasteless. She sent it to me after her final trip to Hyde. I saturated the stuff with Wilbur's to make it edible. I still have, right here at the computer now, the bottle with about 3 of the 10 ounces left. I think I will use it very sparingly, and leave an ounce in it for eternity. I will do the recipes, and remember -- and remember. Caroline, Rest in Peace. --Merlin

Looking for information on the Thomas Wood who died in Hyde County NC c1740. His will was dated 19 July 1740 and probated in December 1740. As taken from the abstract, in the will he mentions a Scarbrough (plantation); sons Richard, Abraham and Isaac; daughters: Rachel and Sarah Wood; wife and executrix: Naomi. Witnesses: Uriah Collins, Lemuel Whyn, Martha Whyn. Clerk of the Court: W. Barrow. Isaac evidently remained in Hyde county, his will being probated there c1797. Richard was enumerated on the 1748 Hyde County Tithables, then I can find no further record of him. As for Abraham, I believe he "might be" the Abraham who died in Surry County NC c1788. There is also a Richard Wood enumerated on a 1786 Surry County NC Tax List, so perhaps this "might be" the Richard who is the son of Thomas and Naomi.
