Here is a link to their Records page: http://www.ah.dcr.state.nc.us/archives/records.htm#co Once there, scroll down to the paragraph beginning: Guide to Research Materials in the North Carolina State Archives: County Records. Click the link, and a new browser opens to an online version of the booklet. You can search for the County of interest by typing in the name of the county in the "Find" box that pops up, and click "Next". It will search for the pages with info on that county.
