I've enjoyed seeing the discussion about the recipes. Just the mention of scalloped tomatoes brings back some wonderful memories of some of the family gatherings at my Grandmother and Granddaddy Woodalll's house. Add the sugar and then mix well. Add the bread crumbs or cracker crumbs. Add a dash or two of cinnamon. Stir well. Bring to a simmer. Stir often and cook down to a pudding consistency. Enjoy. I am now looking for a good recipe for......tomato pudding! I have had it at one place in Bertie County (in Windsor) and they refused to give me the recipe. Any of you ever had it? Would you like to share the recipe? Maybe others would love this as well as I do....it is soooo good. I figure it must be a Bertie thing...LOL have not been able to find the recipe any where else.
