Is it possible that Sarah was her nick-name? I have conflicting info showing two different names for her, but I'm sure they are the same person. The other name I have is Rebecca Elizabeth Bess, daughter of Jane (maiden name unknown) and Martin Bess. One World Tree has Rebecca Elizabeth Bess b. 1868, married to William Christian. I have also found records on the Missouri State Archives Birth records with her listed as Rebecca E. "Christain" (probably an error) married to William "Christain", their child's last name is listed as Christian, so I'm pretty sure it's just an error.
