In 1860 he is on the Jackson, Camden, Missouri Census as Matthias Merdith, with wife Surrilda, Children Daniel, Benjamin, James, Samuel, Sarah Isabel, William, Martin, jZacariah, and George. in 1870 he is listed as Mathias Merideth in Jackson, Camden, Missouri with wife Mary, Children Sarah, Zachariah, Margaret, along with a N Thornesberry, Richard , Charles and Harman Thornesberry. In 1880, He was listed again in Jackson, Camden, Missouri as Mathias Merideth with Mary L. Merideth, Sarah E. Merideth, Oliver Merideth and a G.F. Glover. I show that his son Daniel Mathias married Mary Jane Pemberton. I cannot find Mathias on the 1900 census. So It would appear that Mathias DID remarry after Serilda Wiseman Meredith died in 1863. There is a marriage on the MCHS marriage list for Mathias Meredith and Mary J. Thornsberry on 23 Jul 1863. When did Daniel Mathias Meredith marry Mary Jane Pemberton? I had 23 Jul 1863 (don't know where I got it).
