Hello John, having a similar occurrence in my wife's family tree, I suspect you will find that this was a mixed marriage - Catholic and Protestant and that the twins were baptised into both faiths to satisfy both families. St Mary's is likely to be the Protestant Church & St Patrick's the Catholic one. It was/is normal for the non Catholic partner in a mixed marriage being required to agree to raise the children as Catholics. And yes, Sponsors fulfilled more or less the same function as Godparents.
