Oh, poor Doug, I think women may enjoy something like that more than men, to see how the bride is dressed and all that. But I do have to agree enough is enough, just let them go on their way now and have their honeymoon. Whereever I don't really care. Might be interesting to be a fly on the wall at the party tonight with more of the younger generation and see just how stupid they can get. Buzz just about picked up a new nickname the last time he was here..Samson . I mean that boy had a head full of hair ! I was totally forbidden to take him to one of his favorite haunts..the HAIRCUT PLACE...but I sure wanted to.{ In my mind, shaggy hair means an unloved child }. I just told those staring at him I thought his Mom was planning to stuff a mattress....Eventually, all of that hair about burned him down though , and this caused Mommy D to cut his hair after he went home. She was mad , so the haircut didn't turn out too hot..I know where she's coming from on this ....I'd just as soon thread a sewing machine running at full throttle as to cut Buzz's hair, myself....Although, I've been told NOBODY moves when SHE'S cutting their hair... She finally took him to the local Haircut place and had them trim the back but left the front kinda longer so he wouldn't look retarded....she said....Apparently didn't work, as a little girl at school didn't agree with the barber so decided to trim the front short like the rest of it...With no beauty school training whatsoever, and a boy who can't set still....Well, just to gloss it over, it didn't turn out too good...........The little girl's name ? I gathered the first of the poke salat and other wild greens and cooked them for supper....Yummo! I didn't look really hard, so just got poke salat, violet leaves and wild lettuce...a good mix...I washed it, parboiled it once, then finished cooking it in a skillet where I had fried some ham slices cut off the Easter ham...It was really brown looking so I knew it would give the greens a good taste....Thought the 'newbies' on the list might like to read this article I wrote some time back about poke salat...Jeannie T ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ I can remember Mama talking to us about the early years of their marriage....Guess Daddy moved away from his farming family with her and they sharecropped to get a start on buying their own farm. They ate it in the Spring but had never thought of canning it for the winter months. It was served cooked with meat grease and with eggs scrambled into it....kinda cuts the 'whang.' 'Course it has to be parboiled because there is a mild poison in the leaves. I like to get it when the fat stalks are just up about 6 inches, and cut it up and cook it all...Mama just picked polk salat and 'mouse ear ' but I recognize about 8 edible wild plants....She sometimes mixed the polk with mustard and turnip greens...You have to remember they didn't have the choices we do now days, and were starved for green things to eat after the long winters diet of soup beans and such.. I believe I saw some polk salat down along the back fence.....Better go pick it if I'm gonna have it for supper.. These are delicious I remember them when Janet (Bubbie) made them It is rich, flavorful *Bubbie’s Cream Puffs* ½ cup boiling water ¼ cup butter ½ cup all purpose flour 2 eggs Pour boiling water over butter in a saucepan, bring to a boil and stir until butter melts. Now add flour all at once, and stir constantly with a wooden spoon until the mixture leaves the sides of the pan and forms a ball. Remove from heat. Immediately add unbeaten eggs one at a time, beating to a smooth paste after each one. Then beat the mixture until smooth and velvety. Drop by heaping tablespoonfuls onto a greased baking sheet, keeping mounds uniform in shape and height, about 3 inches apart. Bake in a hot oven (450 degrees) 15 minutes or until well puffed and delicately browned. Then reduce heat to slow (300 degrees) and bake 30 to 40 minutes longer; this will bake the centers thoroughly, but puffs should become no browner. Remove to a cake rack to cool. When cold, cut off tops with a sharp knife. Fill with Cream Filling, (below) thick Soft Custard (below) whipped cream, or ice cream. Replace tops. Makes 6 to 7 cream puffs. [Double this batch for a normal party. Quad the recipe for Fullers.] * * *Swan cream puffs:* To make the swan neck and head, pipe the chou paste (cream puff mixture) through a large pastry tube, using a large star tube, onto the greased baking sheet in the shape of an S. For the tail, pipe a comma-shaped piece. Make one for each cream puff and remove from the oven after the first 15 minutes of baking. After filling the cream puffs, insert a head and a tail in each swan, cutting holes if necessary. The tops cut off to put in filling may be cut in half and stuck into the cream filling at an angle to simulate lifted wings. * * * * *1st *Bake your puffs / eclairs.* * *2nd *While they cool, make your filling (and, no, boxed vanilla pudding is NOT an acceptable substitute…)** *Last step: *Bubbie would also make a thin chocolate (fudge) topping. You can do this with butter, cocoa, powdered (confectioner’s) sugar, vanilla, and a touch of cream. Consistency should be thick-but-pourable. Directions for real “pourable” chocolate icing: Melt a stick of butter over very low heat, add cocoa, stir. Add powdered sugar, stir, add in cream, remove from heat. Stir. Add vanilla, stir. Pour two tablespoons over each filled éclair. * * * * *Cream Filling for Cream Puffs* 1/2 cup sugar 1 egg, beaten ¼ cup flour 1 ½ tablespoons butter ½ teaspoon salt ¾ teaspoon vanilla or ½ teaspoon lemon extract 1 ½ cups milk, scalded Mix sugar, flour and salt in top of double boiler. Gradually stir in the hot milk and cook over direct heat until thickened, stirring constantly. Stir a little of the hot mixture into the beaten egg, return this to rest of mixture and place over boiling water, stirring constantly for 2 minutes. Remove from heat, stir in butter and flavoring and cool. Fill into cream puffs or éclairs. For best flavor and crispness, filled cream puffs or éclairs should be served the same day they are baked, and filled puffs should be kept in refrigerator. Enough filling for 5 good sized cream puffs.* * ** *Soft or “Boiled” Custard for Cream Puffs * 3 cups milk 3 eggs, beaten 1/3 cup sugar 1 teaspoon vanilla ¼ teaspoon salt Scald milk with sugar and salt in top of double boiler. Beat eggs well and slowly stir in the hot milk. Return to double boiler and cook over simmering water, stirring constantly, until mixture just coats a metal spoon. Custard will thicken somewhat on cooling, so do not try to cook it until thick, for this will cause it to curdle. Remove immediately from heat and set pan of custard in cold water; add vanilla, and chill before serving. Serve in sherbet glasses or sauce dishes, or as a sauce for cake or pudding. 5 servings. *Note*: Custard which has begun to curdle can often be restored by placing it quickly over cold water (to stop cooking immediately) and beating vigorously with a rotary egg beater until smooth. Do not reheat. Be kinder than necessary, for everyone you meet is fighting some kind of battle. When I was growing up in Arkansas, we were dirt poor but Mother always managed to have a ham at Easter. I don't remember what else we had with it. cranberry sauce probably. maybe sweet potatoes. I do remember her scoring the fat and putting a whole clove in the center of each rectangle. also pineapple slices with a cherry in the center of each slice. I always thought it was too pretty to carve but didn't hesitate about eating it. There was the tradtional egg hunt after we ate. I am sure we went to church and Sunday school in the morning but can't say truthfully that i remember doing so. Don't remember anything about new clothes at easter time. If we got some, I didn't think it was important enough to remember. Mother always said that I remembered what I wanted to remember and to heck with the rest. iI am sure she was right. Back when I learned to blow out eggs, there was no fancy stuff. I just used mom's darning needle. I would pick the bottom hole out a little bigger. Later I found a very small crochet hook that I used for the bottom end. I probably wouldn't have the wind to do that now.
