In the 1860 Census of Troy, Rensselaer county, NY, there is a James McCan age 40 b. Ireland with wife Mary age 30 b. Ireland, and son Charles age 8 b. NY. It is feasible that your Charles McCann wanted to appear older than his wife, but was not. That's also about the time when many folks with the "McCan" surname began adding another "n."
