Janet, I think that you could be missing out on some records if you only consider those Moses Martin's that had an "L" as their middle initial. Remember that although your ancestor might have always used his middle initial on records, the person actually doing the writing could decide not to write his middle initial. Or what if someone else was the information to the census taker. In my opinion "always" is a dangerous assumption.
