If I were doing the research, I would start by calling the Roman Catholic churches that sound like they served a French-speaking population, and ask if they have burial records dating back to the period you are looking for. If not, ask them which cemetery was likely to be used. Then, be sensitive if they are too busy to talk to you. Remember, it isn't their job to answer your genealogy questions. You might also try calling the town Public Works departments which handle maintenance on the non-religious cemeteries. They may have card indexes of burials, and sometimes you will find a person willing to be helpful.
