My Grandma, Mollie Curtis Pigg Wells, of Paintsville (Greentown) used to make fried corn by putting some butter in her big old cast iron skillett and then would cut the kernels from fresh picked (from her garden) corn and add to the skillett with a little salt and pepper. When I was a little girl we would come with my grandparents to visit his sisters and their families in Paintsville. Aunt Maude made the BEST 'fried corn'. I think that she put a little lard in her black skillet. Then she added frozen (from her garden) white corn off the cob. A little salt and pepper and it was the best! I am just not sure if that was all that she did. If anybody has a recipe for this I would love to have a copy! Thanks Julie Van Hoose Hussain Email Jtink11731 @aol.com >>
