I also have a connection with a bakery in Louisville. It was called Grau Bakery and Confectionary located at 1747 Portland and shows up in the 1890 directory. According to family stories, my great-grandfather, William Frederick Grau, and his brother, Charles Grau, worked here with their uncle, Eberhard Grau. The brothers then opened their own bakery in Hopkinsville. At the same address Louis Bornwasser (who married Eberhard's daughter, Minnie, is also listed in 1890. What I am trying to verify is that Eberhard was actually related to William and Charles -- I have only an oral history to go by.
