    3. Hey Carter; Thanks, but could you ask your how long you really need to stir this thing and if an Electric Mixer really won't work? In Grandmas house it was a punishment cake, the stirring was penance to get you out of a Jam. 2. Archie Cope
    3. Betty, I don't have a recipe, but I can remember my Grandmother (Eva Sewel Cope, the step-daughter of Nathan Pelfrey) making, Jam cake. As a little boy I tended to be rambunctious. When some indescretion would take me a step across the line Mama Cope would never say anything about my behavior but she would insist on making a "Jam Cake". It was about as heavy a batter as one could imagine and after she had poured the fixins in a big bowl, the stirring was my part, I asked once if I could use a mixer, but she said it wouldn't work. It had to be hand stirred with a big spoon, "stir for 45 minutes", "no more, no less" she would say. I would start stirring and she would start talking about how good the cake was going to taste. A few minutes would pass and my arm would start to stiffen, "YUM-YUM" Mama would say, "I just love Jam Cake". A few minutes longer and my arm would start to ache, "MY-OH-MY, thats gonna be sooo! good", "but you seem to be slowing down, maybe you better stir a little faster", A little longer and it felt like my arm was going to fall off. And Grandma just kept up the constant chatter just as though I wasn't hurting at all. After I had stirred it she would bake and serve it that evening. It did taste good, but I would have rather had something else, a good switching maybe. Archie >Do you by chance have a recipe for a Christmas Jam cake? 1. [KYBREATH-L] Peach Cobbler Recipe
    2. I was searching through some recipes today, one of my hobbies, and found the recipe for my great-grandma's peach cobbler. I made one today and I'd forgotten just how yummy it really was. My grandma grew up very poor in Noctor Kentucky so the ingredients are things most people have hanging around the kitchen. Just thought I'd share it with all of you. This is how the recipe was dictated to my sister by my great-grandma, Leone Childers Carpenter. In a deep pie pan or casserole dish (I use a round one and my sister uses a deep pie pan), melt 2/3 stick butter or margarine in a 350 degree oven. Meanwhile, bring 1/2 cup water, 1/2 cup granulated sugar, and 1 cup fruit to a boil. Do not use the syrup if using fruit from a can. At the same time (you have to be an octopus) beat until smooth, 3/4 cup all-purpose flour, 3/4 cup sugar, 1 tsp vanilla, 1 1/2 tsp baking powder, pinch of salt, and 1/2 cup milk. Pour the batter over top of the melted butter in the casserole dish. (It will look like you've screwed up, but you haven't!) Do not stir. Then pour the fruit mixture over the top of the batter. Don't stir. (It will still look like you've screwed up, but you haven't). Bake for 30 minutes at 350. Enjoy either warm or at room temperature. This is SO simple and so good. And you can whip it up easily if you're caught without a dessert. We've always made it with peaches, either fresh or canned, but it would also be good with berries, raspberries or blackberries sound good to me. Kandy Back Agee Xenia, OH
