Hi Katie, Here's a link to the Roman Catholic parish maps in County Mayo. Click on each parish on the maps to see the years covered in the records and where they can be accessed. You'll find many of the Roman Catholic parish records in County Mayo don't begin until well after 1840 sometimes the last half of the Nineteenth Century: http://www.irishtimes.com/ancestor/browse/counties/rcmaps/mayorc.htm You're more than welcome to come here to Mayo to search at each parish in the county for any "hidden" records.
