A "Standard Surname Index" search at http://tipperarynorth.brsgenealogy.com/ for "Birth Records for Tipperary North" for Surname: Delany, Firstname: C, Father Firstname: Andr, Parish/District: Dunkerrin (RC) yields the following record: Church Baptism Delaney Catherine 1835 Co. Tipperary Dunkerrin (RC parish) father: Andrew This Catherine's age on 6 January 1856 would have been 19 or 20 - the same as yours, who arrived in Australia on that date. Have you purchased the transcription of this record online (5 Euro) to see if it could be your Catherine? The mother's name and names of sponsors usually appear on records of baptism like this one. A similar search at the same site for the marriage you mentioned also yields this possibility - in 1825, not 1823: Church Marriage Tierney John 1825 Co. Tipperary Parish: DUNKERRIN (RC) Church Marriage Delany Anne 1825 Co. Tipperary Parish: DUNKERRIN (RC). Of course, there is no guarantee that these two even married one another, but the year and parish match one another and are close to the 1823 date quoted in your family history for a John Tierney and Anne Delany in Dunkerrin. I might point out that Dunkerrin Catholic parish straddled the border of Tipperary and Offaly. Records for both sides of the border appear at the North Tipperary website as "Tipperary".
