I can recommend "The Abbey" B&B, across the street (literally!) from Jerpoint Abbey near Thomastown in Kilkenny. Talk to Mrs Helen Blanchfield...nice rooms, cooked to order breakfast, very scenic, and great location. We went to Jerpoint first thing in the morning and had the place to ourselves.
