Chris, Pre 1901 Irish Census records don't exist for various reasons. The fact that the Fitzgeralds emigrated from Queenstown (Cobh) n necessarily proof that they were from Cork, but it may indicate that they were from a nearby county - Waterford, Kerry, etc. Civil Registration began in 1864, so your best bet is to search the birth indexes in various countie for Mary, Richard, Sarah, and Joseph at http://pilot.familysearch.org/recordsearch/start.html.
