Chris There were a number of ways to get England/ Wales via boat prior to 1871 (your time frame). Have you looked for your GGF in the UK? This may be the key to finding info. The England & Wales Census were taken 51,61 & 71. Any marriage or birth would be recorded there. The UK records are good, Ireland is probably going to be the most difficult. I suggest doing some digging in UK, any info will help. 4 segments of my Irish roots: Cork to Wales(10-20yrs) to Pittsburgh, PA 1871, 1872 & 1874 & 1879 (all traveled from Liverpool to NY with a stop in Queenstown/Cobh.
