I found two possibilities for this recipe, though neither referenced the Shelby Co. Fair. Well here's how you can make them - Anytime, for your family, from Scratch! One Can - of good quality brand ... "Cream of Mushroom Soup", 1 - Egg, and 33 Saltine Crackers - crushed finely and pour ingredients into a bowl and stir - in mushroom soup & Egg, till you have a thick paste. Then use a spoon to scoop and drop small portions into a Deep Fryer - Fry until done, Looking like "Hushpuppies" and then serve - Hot. My Hubby - Old River - Bill, calls these "Mush- Puppies", because they turn golden brown and look just like - hushpuppies, but taste exactly like fresh - Deep Fried - Mushrooms!" The second version was published in "The Hoosier Cookbook", edited by Elaine Lumbra, 1976. "Mock Mushrooms 1 can cream of mushroom soup 1 or 2 eggs, beaten 30 soda crackers, crumbled Mix together. Drop by spoonfuls into hot fat and fry until brown. Drain on brown paper. (Mrs. Donna Mundy, Martin County)" ---- I tried making the first version this evening, though I added a small can of drained, sliced button mushrooms to the mixture and completed it by pan frying. It looked very much like breaded morels while pan frying. We enjoyed the final result enough to keep the recipe for future reference. Heidi
