The internet is not working well (the noon rush hour) but here are the WIRT men from Montgomery and neighboring counties, A-J. A.D. Living in Yankee country, I get hungry for familiar foods and try to create them. I used canned cling peach slices. Canned because they were cheapest; cling because they were firm enough to take the re-boiling; and slices because I wanted the spices to penetrate, and thinner seemed better. I made a spice marinade with the drained peach juice, white vinegar, cloves, broken cinnamon sticks; brought it to a boil, poured it over the peaches and refrigerated for a few days. Next time I do it, I'll try adding a chopstick dipped into cinnamon oil to stir it. That stuff is potent, and even a "drop" would be too much. That's how I spice commercial apple butter -- I dip a chopstick (wooden) in the oil, and stir the opened jar of apple butter. Put it away in the refrigerator for a few days to mellow. I got this idea because when the sons of WT and Mary Forrest Shelley made apple butter in a vat-sized kettle, Uncle Pat (Maurice), the son who was a chemist in Chicago, used to bring cinnamon oil for the project. A whole jar (one tablespoon???) went into the vat. Just to give you an idea of the quantities involved, the rather mechanical brothers rigged a boat oar to stir it, powered by a small engine. This needs re-writing -- sorry, guys -- but my husband wants his computer back!Kathy
