Living in Yankee country, I get hungry for familiar foods and try to create them. I used canned cling peach slices. Canned because they were cheapest; cling because they were firm enough to take the re-boiling; and slices because I wanted the spices to penetrate, and thinner seemed better. I made a spice marinade with the drained peach juice, white vinegar, cloves, broken cinnamon sticks; brought it to a boil, poured it over the peaches and refrigerated for a few days. Next time I do it, I'll try adding a chopstick dipped into cinnamon oil to stir it. That stuff is potent, and even a "drop" would be too much. That's how I spice commercial apple butter -- I dip a chopstick (wooden) in the oil, and stir the opened jar of apple butter. Put it away in the refrigerator for a few days to mellow. I got this idea because when the sons of WT and Mary Forrest Shelley made apple butter in a vat-sized kettle, Uncle Pat (Maurice), the son who was a chemist in Chicago, used to bring cinnamon oil for the project. A whole jar (one tablespoon???) went into the vat. Just to give you an idea of the quantities involved, the rather mechanical brothers rigged a boat oar to stir it, powered by a small engine. This needs re-writing -- sorry, guys -- but my husband wants his computer back!Kathy

    3. (Great) Uncle Frank wasn't the only family member with back problems. Uncle Forrest (Forrest Edward Todd,) one of the brothers of my father, Francis ("Frank") Leverett Todd, had excruciating back problems, culminating with horrible spinal cancer, in the end. Great Uncle Frank and Uncle Forrest both had the same stooped walk. Myself...well, occasionally, I suffer from excruciating pinched nerves. You know I wrote about that in one of my Chrisstmas stories, "Mr. Attitude Had Given His Love,"about my dog, Jacques XVIII ("Mr. Attitude") who finally lied down next to me during that time when I was stuck on my back on the floor in front of the Christmas Tree for two days! I added some sarcastic remarks: "It would be in front of the Christmas Tree. Well, Merry, Merry Christmas." Unlike Uncle Frank and Uncle Forrest, MY back pain is not constant. But, when it hits, it is horrible...until my back goes back into place.
