In the 1840 Gallatin County (Saline County was formed from the western half of Gallatin County in 1847) Census there are three PRICE families: Page 20, Line 6: PRICE, Nimrod, Agr, Males: 1 20-30 Females: 1 0-5, 1 20-30 Page 42, Line 21: PRICE, David, Agr, Males: 1 5-10, 2 10-15, 1 60-70 Females: 1 0-5, 1 5-10, 1 10-15, 1 16-20, 1 40-50 Page 60, Line 20: PRICE, Eli, Agr, Males: 1 20-30 Females: 1 15-20. The 1840 Gallatin County Census is available online at http://www.rootsweb.com/~cenfiles/il/gallatin/1840/. From the marriage index of Illinois: PRICE, Eli W. m. EDWARDS, Margaret Ann, White Co., Jul 1840. PRICE, Nimrod m. MCDONALD, Sarah, Jefferson Co., 9 Mar 1837. PRICE, David m. MULICAN, Elizabeth, Bond Co., 12 Aug 1829. The marriage index is available online at http://www2.sos.state.il.us/cgi-bin/marriage. The first two marriages look like good matches to the Census, questionable on the third marriage, but the only one showing before 1840. The family of David PRICE seems to be your best bet for three male children born before 1840.
