Hello Brenda and everyone: The first thing you should remember about Father Roy was that he was the first president of St. Viateur's College. He came around 1865 and along with Father Beaudoin took care of the needs in Bourbonnais. Father Beaudoin was pastor of Maternity and President of the college by 1883 when the Kankakee County Atlas was published, and Father Roy was already deceased. I think your search should take you to Maternity, and then maybe St. George and Manteno. I wonder if there is a chance there were marriages recorded at St Viateurs?
