This holidays are coming soon & I thought I would share my mother's carrot bread receipe with you. Mother was born in Emerson, Mills County, Ia 1926. It is easy & fast to make. The worse part is grating the carrots. BETTY'S CARROT BREAD Bake time 1 hour Temp. 325 3/4 C oil 1/4 tsp salt 1 C sugar 1 C grated carrots 1 & 1/2 C flour 2 eggs 1 tsp baking soda 1/2 C nuts (any kind, we like black walnuts best) 1 tsp cinnamon 1 tsp vanilla Mix ingredients all together in a bowl. It will look soupy but don't worry that is the way it is suppose to look. Bake in a loaf pan. Vicki King
