"The Hunter Family" by William May Hunter 1921 (out of print) There is a copy in the Charlotte-Mecklenburg NC Room that they may have photocopied and could do an interlibrary loan, etc. you can also refer to "Sketches of Western North Carolina" by Cyrus L. hunter (Humphrey Sr. son circa 1840-1850. It's also in the same library. There is a sketch of Humphrey Sr. as well as his brother Henry Hunter in it. Cheers!
