Hi Charles. Just a quick note which I trust will be taken in the 'spirit' in which it's posted. 'Scotch' is a drink: whisky. 'Scottish' or 'Scot' is a nationality. So your suggestion of Scot-Irish would seem to be correct, while Scotch-Irish would be a blend of two excellent whiskies!
