Likely, she was the last born. I have quite a bit on this Jordan C (Cane) Holt. He was born 1794 in Orange Co NC, but lived in Bedford Co at least as far back as 1817, so your gggmother was probably born in Bedford Co. I am trying to trace a Jordan Holt from Louisiana, whom I believe to be related to this Jordan C Holt of TN, but I just can't quite confirm the connection.
