Actually, most of the wagon companies used ox teams instead of horse teams. The oxen were easier to feed, and tasted a lot better if you had to kill one to eat (or because it went lame). One of Brigham Young's reasons in favor of handcarts was that it took three weeks to train inexperienced people (European Saints) to manage ox teams; time in which the people still had to be fed and delaying their start across the plains. If you check Melvin Bashore's list of companies and journal sources by year (1854) and name of captain (Olsen), you should find it. This list is on microfilm at the FHL. You would find it by doing a locality search for state of Utah, then scrolling through the topic list to find Emigration. There is one list for crossing the plains and another for crossing the ocean.
