I would suggest finding other recipes with citron, and comparing quantity and amount of other ingredients. Maybe you could figure out approximately how much to use. It might take some experimenting. Or contact the extension service of a nearby university--ours has home economics people who help with things like that. Or check with a college food and nutrition department or a chef in your area for advice.
