Spargel is white asparagus. European asparagus is white, asparagus in the USA is green. The stems of the European asparagus plant are covered while they are growing so they do not receive light and become green. Sometimes one can find white asparagus canned or packed in jars in an American supermarket. I have not eaten the white asparagus, but have heard about it. Speisekarte means menu.
