Father or brother may have signed as witnesses. I can't read the names on the image in Ancestry. It is indexed as "Poff". The 1860 has Phillip Popp, 61; Catharine Popp, 59; Christopher Popp, 25; Simon Popp, 20; John H Popp, 16; Margaret Popp, 13; John C Popp, 11 All born Bavaria. Year: 1860; Census Place: Cinque Hommes, Perry, Missouri; Roll: M653_638; Page: 717; Image: 251; Family History Library Film: 803638. The youngest son was born in 1849 (or thereabouts) in Bavaria. The likelihood, then, is that they immigrated around or after 1850. The 1900 census of Perry County shows John C Popp, b July 1849, immigrated in 1851. Source Citation: Year: 1900; Census Place: Central, Perry, Missouri; Roll: T623_880; Page: 4A; Enumeration District: 74. Christopher, in Central, Perry county, MO, in 1900, also gives 1851 as the immigration year. I think you may find that they were not in the 1850 census because they were still in Bavaria.
