Dear Irish Newbies and those who wish they were! We are vacationing in Mexico with four of our children. I can hardly wait to see what restaurant menus have to offer us tomorrow! I went to Kohl's, Boscovs and Kmart in search of clearly labeled "Irish" shirts for each family member to wear tomorrow. I hit a pot of gold at the rainbow's end in Boscovs where there was a table heaped with lovely, tacky Irish logo shirts for $4.00 each. For some reason my Windows Mail account is misbehaving. It took me a couple of days to figure out that Verizon Mail was friendlier. I was feeling VERY left out of Elaine's Relaxed Mail invitation. Thank you Elaine. Daddy was 100% Irish, Mother was a "half-breed"....her daddy was Irish and her mother English. Perhaps Mother's mixed ancestry was responsible for the way she prepared....frequently....potatoes, ham and cabbage all boiled together in one pot. (NEVER corned beef-I do think that was a Irish Yankee addition to the pot, besides Mother HATED corned beef.) Our modest little row house (trust me, I was NOT raised in a "townhome") stank to high heaven on boiled cabbage days. I was grown and married before I discovered crisp and buttered boiled cabbage was delicious and bore no resemblance to the mushy, stinky cabbage and cabbage flavored boiled potatoes of my childhood! (It was a wonderful childhood, by the way. I was the baby of the family and the apple of Daddy's eye and Mother made delicious soups and stews.) Elaine generously offered to post her recipe for Colcannon. I will be kind enough to omit Mother's recipe for boiled ham and cabbage. I do think my love affair for BUTTER began way back, and I do mean WAY BACK. I put enough butter on that pile of boiled Irish food to make it o.k.
