Congratulation Annette, That's a great christmas present. Your family must be smart as well as generous. YES, You can transfer any data you have to the iMac Data from email, word, spreadsheet, images, music, video etc are all transferable. If the data is of a non standard format, you can either use the mac version of the application you were using in windows, or export your old data and import it into a similar application for the mac. NO, You don't need to keep the old pc, unless you want to. YES, The iMac can run windows apps,( if you install windows.) Your new iMac can run both operating systems simultaneously. With the new iMac you will probably have got OSX Lion. Boot Camp software is included with OS X Lion. This will allow you to run Windows on the iMac. Parallels Desktop software is also available for integration of windows apps. There is something you should note: Your new iMac has a reliable system with very little chance of malware problems. If you put windows on your nice shiny new iMac, you will be just as vulnerable to malware, as any other windows system.
