Cook a little extra and freeze some. kath Buy some divided dinner-sized plates with lids and at the end of a meal all the leftovers that seem too small of a quantity to save will make a nice one-person meal, if you work and the office has a microwave, a nice hot lunch instead of the usual cold sandwich.
