Mustard & Herb Chicken Breasts Serving Size: 4 1 1/4 pounds boneless skinless chicken breast halves 3 tablespoons Dijon-style mustard 1/4 cup lemon juice 1 tablespoon olive oil 3 strips lemon zest -- julienned and minced 1/3 cup mixed fresh herbs, finely chopped Wash the chicken breasts and pat dry. Mix together the mustard, lemon juice, oil, lemon zest and herbs. Spoon this mixture over the chicken. Place on a roasting pan and grill under a preheated broiler for 3 to 4 minutes. Then bake in a 375 degree oven for 10-15 minutes or until the juices run clear.
