Alligator Sauce Piquant 4 lb Cubed Alligator Meat 1/2 cup Chopped Celery 1 cup Flour 1/2 cup Chopped Bell Pepper 1 cup Oil One 8 oz Can Chopped Mushrooms 4 tbs Butter 1 cup Water 2 Medium Chopped Onions 1 Jar Salad Olives 1/2 tsp Sugar 1/4 cup Chopped Parsley 1 Can Tomato Paste 1/4 cup Chopped Scallions Salt & Cayenne Pepper & Louisiana Hot Sauce To Taste *** Soak meat with hot sauce and lemon juice for 30 minutes prior to cooking. Rinse before cooking. Make roux with 1 cup oil and 1 cup flour and cook until golden. Sauté onions in roux until brown. Add tomato paste and sugar and cook about 5 minutes. Add bell pepper, celery, garlic, mushrooms and stir well. Add water and cook 1 hour over low heat. Add scallions, parsley, alligator (cut in small pieces, and preferably meat other than from the tail) salt, pepper and cayenne to taste. Cover pot and cook slowly for 30 minutes or until meat is tender. Add olives which have been soaked in water and cook a few minutes longer. Serve over cooked rice. Enjoy. Yield: 10 Servings
Pit-Roasted Turkey You can cook the turkey in an underground pit. We do this with turkeys, whole hogs, deer, chickens, salmon, briskets, well, just about everything! First dig a pit deep and wide enough for the turkey and 6 to 8 inches of hot coals. We burn enough wood to make a hot coal bed, 6 to 8 inches deep. Cover the hot coals with a sheet of tin. Place your wrapped meat on the tin. Cover the hole with another sheet of tin. Bury the top sheet with dirt-this mainly keeps the heat in, make sure you cover the edges to keep the heat from escaping. Come back in 10 to 12 hours and you have perfectly roasted meat. This is a sort of underground oven. I wrap the meat with at least 3 layers of foil. Some people use wet burlap. Season the meat with your favorite seasonings before wrapping. We usually do ours at nite and the next morning we dig it up and keep it warm til the feast.

Serve over brown rice or bulgur. Soak top and bottom of pot in water for 15 minutes. Pour all ingredients, except arrowroot, into large round bowl; mix thoroughly with your hands. Place mixture in presoaked pot. Place covered pot in cold oven. Turn temperature to 450'F. Cook 90 minutes. Remove pot from oven. Pour off liquid into saucepan, bring it almost to a boil, and thicken with arrowroot mixed with 2 tablespoons of water. Serve with brown rice or bulgur. Pour sauce over rice and lamb. Place ham, fat side up, on rack in shallow roasting pan. Pour about 1/2 cup mixture over ham and bake, uncovered, in a preheated 325 degree oven for 1 1/2 hours. Baste every 30 minutes with additional sauce. Remove ham from oven and score fat into diamond shapes. Insert a clove into each diamond. Bake ham an additional 30 minutes or until a meat thermometer inserted into the thickest part of meat registers 140 degrees. Let ham rest 15 minutes before carving. Add all the ingredients; stir until well mixed. Cook over low heat 3 to 5 minutes. Yield: Serves 6-8. °°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°° Easter Babka ------------------------------------------------------- Cake: 1 1/4 cups lukewarm milk 2 packages active dry yeast 6 Tbsp sugar 6 to 6 1/2 cups all-purpose flour 1/2 tsp salt 10 egg yolks 3/4 lb plus 2 Tbsp unsalted butter - softened 1 cup white seedless raisins 2 Tbsp finely grated orange peel 1 Tbsp finely grated lemon peel White Icing 2 cups confectioner's sugar 1/4 cup cold water 2 tsp fresh lemon juice Pour the lukewarm milk into a small bowl and sprinkle it with the yeast and add 1/2 teaspoon of the sugar. Let the mixture stand for 2 or 3 minutes, then stir to dissolve the yeast completely. Set the bowl in a warm draft free place for about 10-15 minutes, or until the mixture doubles in size. Place the 6 cups of flour and the remaining sugar and the salt in a deep mixing bowl and make a well in the center. Pour the yeast mixture into the center and the egg yolks, and with a large spoon, gradually stir in the flour into the liquid ingredients. Continue to stir until well mixed, and then beat in 3/4 lbs of butter a few tablespoonfuls at a time. The dough should be firm enough to to be gathered into a medium soft ball. If you have to, stir in about 1/2 cups more of flour, but add it by the tablespoons. Transfer the dough to a electric mixer equipped with a kneading hook and knead for about 20 minutes, or until the dough is very smooth, or knead the dough by hand for about 40 minutes. Shape the dough into a ball, place it in a lightly buttered bowl and dust the top with flour. Drape a towel over the bowl and set it aside in a draft free place for about 1 hour, or until the dough doubles in size. With a pastry brush, spread the 2 tablespoons of softened butter over the bottom and the sides of a 12 inch tube pan or a turban mold. Sprinkle the butter with the remaining 1/4 cup of flour and tip the pan form side to side to spread it evenly. Remove the excess flour from the pan. Punch the dough down and then knead the raisins, orange peel and lemon peel. Pat the dough evenly over the bottom of the buttered and floured mold, drape with a towel, and set aside for another hour, or until the dough has doubled in size. Almost to the top of the mold. Preheat the oven to 375 degrees F and bake the cake in the middle of the oven for about 40 minutes, or until it is golden brown. Turn the cake out onto a cake rack and let it cool. In a small bowl, combine the confectioners sugar, water and lemon juice, and beat with a spoon until it is smooth. Pour the icing slowly over the top of the warm cake. Allow it to run down the sides. Rinse. - WEAK NAILS SALT, CASTOR OIL, & WHEAR GERM OIL: - To strengthen and shine nails, combine 2 tsp. salt 2 tsp. castor oil 1 tsp. wheat germ oil Mix thoroughly. Pour into bottle. Shake before using. To use, rub a small amount into your nails. Leave on 3-5 mins. and tissue off. Follow up with more plain castor oil, if desired. - OVERWEIGHT CHINESE GREEN TEA: - Effective at getting rid of fat, drink up to 3 cups of green tea daily. Regular tea can also be used with a lesser effect. - FACIAL CLEANSER CORNSTARCH & GLYCERIN: - Mix 2 Tb. cornstarch 2 Tb. glycerin 1/2 c. water until smooth Heat in a small pan placed in a water bath inside another pan. Heat until thick and clear; it will have the consistency of pudding. Do not boil. Cool completely, Use in place of soap to cleanse your skin. (If jelly is too thick, you may thin it by adding a little water, one Tb. at a time, until you reach the desired consistency.) - TOOTHACHE & MOUTH PAIN PEPPERMINT & SALT: - To ease toothache or other mouth pain, make a tea by boiling 5g of fresh peppermint in 1 C. water and adding a little salt. Peppermint is an antiseptic and contains menthol, which relieves pain when applied to skin surfaces. - WRINKLES & SKIN FRESHENER VODKA, FENNEL, & HONEY: - Combine 2 Tb. vodka 1 Tb. fennel seeds 1 1/2 tsp. honey Stir well and allow to sit for 3 days. Strain mixture. Use full strength or add 2 Tb. water to dilute. Use a cotton ball to apply to face as a toner. This was also a tried and true recipe for wrinkles. - ARTHRITIS FISH: - A daily serving of fresh fish or fish oil capsules helps to give relief of arthritis and other aches and pains. - HAY FEVER FENUGREEK SEED - Steep 1 tsp. seed 1 c. water, covered for 10 mins. Drink 1 c. a day to help hay fever symptoms. - COLD & FLU GARLIC SOUP: GARLIC, CHICKEN SOUP OR BOUILLON, & EGGS: - A delicious recipe for a cold or flu!: Cut up half-a-dozen cloves of garlic and saute' in oil, being careful not to let them burn. Add a quart of stock (such as beef), and let it come to a boil for just a few moments. Then lower the heat. Separate two eggs and add the whites to the hot liquid, stirring rapidly. Mix the yolks with two Tbs. of vinegar and then pour them in. Add salt and pepper if you want and some croutons, if handy. - COUGHS & ASTHMA GARLIC & BRANDY: - Make a garlic tincture by placing three to four peeled buds in brandy. Steep this in a dark closet for 14 days. Use several drops at a time, several times a day for coughs or asthma. Garlic is an exceptional cleanser for the body and has antimicrobial action similar to other antibiotics. - DIARRHEA SWEET POTATOES: - Eat boiled sweet potatoes seasoned with salt and pepper before bedtime to cure chronic diarrhea. - EARACHE CHAMOMILE: - Steep 1-2 tsp. flowers in boiling water for 10-15 mins. Strain out the water, and apply the hot flowers in a cloth for alleviation of the earache. - EYE PROBLEMS HYDROMEL: HONEY & WATER: - For Hydromel, an eye lotion, simmer a cup of water and a tsp. of honey for 5 mins. Dip a cloth in the liquid and apply to the closed eye. - HEADACHE ALMONDS: - Eat 10-12 almonds, the equivalent of two aspirins, for a migraine headache. Almonds are far less likely to upset the stomach. - PAIN RELIEVER HONEY: - Mix 3 large spoonfuls of honey in boiled water and drink. Honey has natural pain-relieving powers. - INSECT BITES CORNSTARCH: - Mix water with cornstarch into a paste and apply. This is effective in drawing out the poisons of most insect bites...and is also an effective remedy for diaper rash. - VARICOSE VEINS BLACKSTRAP MOLASSES: - For varicose veins, take 2-3 tsp. of blackstrap molasses daily. Or sprinkle with automatic dishwashing powder, cover with wet paper towels, let it stand for a few hours, then clean with a damp sponge. - Refrigerator - To eliminate smelly odors keep an open box of baking soda (most everyone knows that) or a piece of cotton dipped in vanilla extract in your fridge. - To prevent mildew wipe down the inside occasionally with white vinegar. - To clean underneath the fridge, tie a sock around the end of a yardstick and go at it! - Dishwasher - Dip a damp rag in baking soda to clean up any inside spots. - For odors, sprinkle bakingsoda in the bottom and let it stand overnight. - Blenders & such - Fill the container halfway with hot water & a couple of drops of dish detergent. Cover and blend; rinse and dry. - Electric can opener - Loosen dirt with a toothbrush & run a paper towel through the cutting assembly. Let stand for 30 minutes; then rinse thoroughly with cool water. - To dissolve grease in a clogged drain, pour 1 cup salt and 1 cup baking soda down the drain followed by a large amount of boiling water. - Stainless steel sinks - You can make them really shine with club soda or white vinegar. After normal use wipe with a damp cloth and dry with a soft cloth. To deep clean, wipe with a solution of ammonia and water or dish detergent and water. Dry thoroughly to avoid spots. - Treat rust marks by rubbing with lighter fluid. Then wipe clean with a liquid cleaner. - Pots & pans - To clean copper pots: Fill a spray bottle with vinegar & 3 tablespoons of salt. Add 1/2 cup each of detergent and baking soda. Then wash, adding 1 cup white vinegar to the rinse cycle. Do not spin dry or wash vinegar out. Hang immediately and wrinkles will disappear when completely dry. - To prevent mildew from forming on new shower curtains, soak in salt water before hanging for the first time. - A toothbrush and any spray cleaner works wonders on shower door runners. - Toilet - To remove toilet rings, flush to wet sides and apply a paste of borax and lemon juice. Let sit for 2 hours, then scrub. Also Lime-Away is truly the best toilet and tub cleaner, gets ANY stain out! - Fixture cleaners - For chrome faucets or fixtures, try rubbing alcohol for a super shine. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Miscellaneous - To remove hairspray film from mirrors, wipe with rubbing alcohol. - To create a fresh, clean aroma in the bathroom, toss a sheet of fabric softener in the wastebasket. - Or dab a bit of perfume on a lightbulb. It floods the room with scent when the light is turned on. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Windows & Walls Use vertical strokes when washing outside windows and horizontal for inside windows. This way you can tell which side has the streaks. Don't wash windows on a sunny day. They will dry too fast and probably streak. - Straight vinegar will get outside windows really clean. - Blinds or shades Clean venetian or mini blinds by saturating a cloth with rubbing alcohol and wrapping it around a rubber spatula to clean both a bottom and a top slat at the same time. - Walls For an all purpose cleaner for painted walls, mix 1 cup ammonia, 1/2 cup vinegar and 1/4 cup baking soda with 1 gallon warm water. Wash thoroughly and rinse. Wear rubber gloves. - Crayon: Rub lightly with a dry, soap filled steel wool pad. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~` Wallpaper - Clean marks with a paste of cornstarch and water. Apply to spots, let dry, brush off and repeat if necessary. - Apply baby powder to a clean powder puff; rub into grease spot until it disappears. - For cracking plaster, mix Elmer's glue and baking soda into a paste. Run through an entire cycle. The vinegar cleans the hoses and cleans away soap scum. - A paste of vinegar and baking soda will remove dirt and mildew from clothes. - Blood: Cover stain with meat tenderizer. Add cool water to form a paste. Let stand 15 to 30 minutes, then sponge off with cool water. - Mildew: Dampen with lemon juice and salt. Dry in the sun. - Grass: Sponge with denatured alcohol before washing. A fresh egg will sink in water, a stale one will float. For light, fluffy scrambled eggs, add a little water while beating the eggs. - Add vinegar to the water when boiling eggs. The vinegar helps seal the egg and prevents the shell from breaking. - For long term storage, crack open the eggs and add individually to an ice cube tray. When completely frozen, put the egg cubes in a sealed freezer bag and use as needed. - When making scrambled eggs for a large crowd, add a pinch of baking powder and 2 tsp of water for each egg to make your meal go even further - Can't remember if an egg is fresh or hard boiled? Just spin the egg. If it wobbles, it's raw. If it spins easily, it's hard boiled. - Fresh eggs have a rough and chalky shell. Old eggs are smooth and shiny. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Veggies Lettuce and celery will crisp up if you place them in a pan of cold water and add a couple of slices of potato. When cooking carrots, peas, beets or corn add a small amount of sugar to the water to keep the flavor. - Never salt the water you cook corn in. It will only toughen the corn. Store tomatoes with stems pointed down and they will stay fresher longer. - How to ripen fruit Place green fruits in a perforated plastic bag. The holes will allow air to circulate while retaining the ethylene gas that fruits produce during ripening. - Ripen green bananas by wrapping in a wet dish towel and placing in a paper bag. - Brown sugar To soften rock-hard brown sugar, add a slice of soft bread to the package and close tightly. In a few hours the sugar will be soft again. Or grate the sugar with a hand grater for immediate results. - Instant white sauce Blend together 1 cup soft butter and 1 cup flour. Spread it in an ice cube tray and chill well. Cut into 16 cubes before storing in a freezer bag. - For medium-thick sauce drop 1 cube in 1 cup milk and heat slowly, stirring as it thickens. - To make your home smell like a bakery: Add a few teaspoons of sugar and cinnamon to a pie plate and slowly burn over the stove. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Fresher is better Vegetables & Fruits °°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°° Store celery and lettuce in paper bags, not plastic. Peel, wrap in plastic wrap and store in freezer bags. - Lemons will give you more juice if stored in a jar of water in the fridge. ~~~~~~~~~~~~~~~~~~~~~~~~~` Dairy products -°°°°°°°°°°°°°°°°°°°°°°°°° Store the cottage cheese container upside down and it will stay fresher longer! - Never pour room temperature milk or cream back into the original container. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Breads, cookies, & crackers -°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°° Add a rib of celery to your bread bag, it will keep the bread fresher, longer. - Cookies stay fresher if you place crumpled tissue paper in the bottom of your cookie jar. - Place 1/2 an apple in the cake box to keep cakes fresher, longer. Bacon - To seperate frozen bacon, heat a spatula over the stove burner and slide under each slice. - To prevent bacon from curling, dip the strips in cold water before cooking. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Miscellaneous - To clean artificial flowers, pour some salt into a paper bag and add the flowers. After shaking vigorously, the salt will absorb all the dust and dirt. Neat huh? - To get a melted candle or just wax out of a candle holder just place in the freezer for about an hour or more, then you can peel the wax right out. - To cut down on fireplace soot, throw salt on the logs occasionally. It can reduce soot by two-thirds. - Use non stick vegetable spray to stop squeaks on door hinges, wheels, etc... æææææææææææææææææææææææ A LITTLE MORE ABOUT HERBS æææææææææææææææææææææ ~~ BRAN ------------------------------------------------------- Put 1/4 pound of bran into 1-1/4 pints of water. Boil till the water evaporates to one pint. Sweeten with sugar. This was used as a laxative. It was also used used to aid the cough and sore throat. Take 1 quart of bran and add to 1-1/2 gallons water. Boil for 5 minutes. Add enough cold water to cool temperature of water down. Use this as a foot bath! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~CHAMOMILE -------------------------------------------------------- This plant is known as the "children's plant" because it is beneficial to children. It is good for teething, stomach cramps, diarrhea and middle ear infections. For adults, it has many uses, too. Chamomile helps ease pain, has a calming effect and helps to prevent infection. For adult and child, it is a great sleep aid. Chamomile tea is a drink I cannot recommend enough! No household should be without it. Add 1/2 ounce of chamomile flowers to 10 ounces of boiling water. Remove from heat and let steep for 15 minutes and strain. Drink cold for a tonic, bitter, and stomachic.(dose is 1-3 ounces.) Drink warm when used as an emetic. (dose is 5-10 ounces) ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ ECHINACEA ------------------------------------------------------ This herb is one of the best herbs to keep your immune system in top notch shape. When you feel yourself getting run down, echinacea will help you fight the infection.But buy only top quality herbs. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Ginger -------------------------------------------------------- Did you know that Ginger is great for a cold? Try drinking Ginger tea. Did you know that Ginger is also a blood thinner? So, if you are taking a blood thinner, you should not ingest any ginger! Could be very harmful if taken at the same time. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Lavender ------------------------------------------------------ Try planting a couple of plants near a front door. They are easy to grow and do not need special care, other than trimming out the old wood. Lavender was chosen by the International Herb Association as the Herb of the Year for 1999! Lavender makes a great disinfectant. Take a clean, 12-16 oz plastic spray bottle and fill it with distilled or spring water. Add about 4-6 drops of oil and shake. Remember to use drops! A little goes a very long way. Now, Spray Away Germs! In the kitchen, bathroom, bedroom, anywhere! Keep a bottle in the bathroom and also one in the kitchen . It makes the house smell nice, and helps prevent the spread of colds and other nasty illnesses. You can put a few drops in your bath after a stressful day. It is noted for its soothing and calming effects. Also put a few drops in the dogs bath water! It really helps take that "doggy" odor way. Lavender also has healing properties. It is good for insect bites, minor wounds and minor burns. Use the same spray bottle! On a hot day, take the spray bottle and mist yourself! It really feels good and the scent will calm you..Use it on your face as a quick hydrator..The lavender will help with any acne, but don't get it in your eyes. Put a few drops of lavender oil in your bureau drawers. Helps keep your clothing smelling fresh..You can also put a few drops in the laundry, too! You can use the lavender flowers for this or you can use the oils. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ PARSLEY ------------------------------------------------------ Parsley is a great herb for cooking and is also a medicinal herb. It is a natural diuretic. It is also good for the liver and stomach. Parsley can be used by women to alleviate irregular menstral cycles and ease the bloating that occurs during the time of the month. Chewing parsley will help with bad breath from food odors such as garlic. Parsley has many, many other uses. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Old Herbal Tonics ------------------------------------------------------ Try this drink to help keep your immune system healthy! Ingredients: 1 apple (peeled) 1 beet (fresh or canned) 1 orange (peeled) 3 carrots (peeled) Place all ingredients in a blender. Mix until well blended. Refrigerate until well chilled. This makes 1 serving. This is good for adults and children. You may add a touch of honey to the drink. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~` Barley ------------------------------------------------------- Take one ounce of washed pearl barley. Boil the barley for 20 minutes in water. This was used a a mild laxative. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Coffee ------------------------------------------------------- Put 10 drams of raw coffee berries into 8 ounces of water and boil. Boil till the water evaporates to 5 ounces. Give in 3 doses during the intermission of intermittent fever. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Dandelion --------------------------------------------- Take 2 ounces of bruised dandelion root and place it in 1 pint of boiling water. Steep for 2 hours and strain. This is a tonic, resolvent and stimulant. Dosage: Take a wine-glassful 3 times a day! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Old Folk Remedies about the Potato The Incas used raw slices of potatoes to place on broken broken bones to promote healing. They also carried potatoes in the belief that it prevented rheumatism. It was also believed that if you ate potatoes with other foods, it would prevent indigestion! Help a toothache by carrying a potato in your pocket! Ease a sore throat by putting a slice of baked potato in a stocking and tying it around your throat. Ease aches and pains by rubbing the affected area with the water potatoes have been boiled in. To Make Most Rare Sausages Without Skins - The Accomplisht Cook, Robert May, 1660 Take a leg of young pork, cut off all the lean, and mince it very small, but leave none of the strings or skin amongst it; then take two pound of beef suet shred small, two handfulls of red sage, a little pepper, salt, and nutmeg, with a small piece of an onion; mince them together with the flesh and suet, and being finely minced, put the yolks of two or three eggs, and mix all together, make it into a paste, and wnen you will use it, roul out as many pieces as you please in the form of an ordinary sausage, and fry them, this paste will keep a fortnight upon occasion. Redaction - Dining with William Shakespeare, Madge Lorwin 2 pounds boned lean pork 1/4 pound beef suet 1 small onion, grated 1 tsp salt 1/2 tsp pepper 1/2 tsp sage 1/4 tsp nutmeg 1 egg yolk Ask your butcher to grind the pork and suet together. Mix the meat with the rest of the ingredients until well blended. Cover and refrigerate for at least six hours to allow the flavors to blend. Form the sausage mixture into small rolls - about four inches long and one inch in diameter. Pan-fry over medium heat, turning the rolls so that they brown evenly on all sides, for about ten minutes. Serve immediately - sausage meat dries out very quickly. My Notes: This is wonderfully tasty, but, unfortunately, my butcher said that he couldn't mince the meat for me (because his mincer was just too big) and assured me that he would chop it all very finely with his knife ... his idea of "fine" and mine are clearly different. I managed to form almost-sausages with the addition of more egg and some breadcrumbs but they broke up in the cooking. I think that mince would work, but it has to be that fine.
