For years, I was always asked to bring in the birthday cakes. This one is sooooo easy and everyone loves it. (It became my best friend's favorite). It is a very dense cake and I usually make it in the morning while I'm getting ready for work - that way it is still warm when I arrive. I have actually had people come out of their offices and follow the smell. I consider it a winter cake, but it is good anytime. I keep the ingredients in the cupboard so if I have guest coming I can quickly make a cake. Enjoy! 1 package Duncan Hines Spice Cake Mix 1 can Apple Pie Filling 1/4 cup oil 2 eggs Coat bottom of pan with oil, then add the rest to the mix. I use an oblong cake pan, it's really too heavy to stack. You could spray the pan with Pam, and add all the oil to the cake but I've never had any problems with this cake sticking to the pan. (I serve it out of the pan.) The apples make it very moist. Mix all the rest of the ingredients (by hand...no mixer) together pour into pan and bake 350ยบ for 35 to 40 minutes or until cake looks done. Serve warm topped with whipped topping or sprinkled with powdered sugar.

Instead, I ended up with an ambulance ride to work (I work at the hospital that they took me to). The ER doctor would not let me work that day, so I just took care of getting my car to the dealership (which was closed) and then waited around till 7:00pm when another nurse got off work, she lives near me and was able to drive me home. I live 45min-1hr from where I work. I told them at work that my guardian angel must have been sitting on my shoulder during the accident. I am not as stiff and sore the last two days the way I was told that I would be. I was given an rx for vicodin in the ER, but so far Motrin has been able to take care of the soreness. Yesterday my rt forearm was purpleing up really nicely, along with the red from the scrapes (very pretty). But now the bruising just looks like I need to wash my arm. I was so blessed in how this all turned out. I could have been hurt much worse than I was. God is good. Kara
