    2. That's strange why don't they give it to the blood banks? My daughter just did free hair cuts for those who donated blood because are blood bank was low. I totally don't understand them throwing blood away. IM glad the red cross is going to get the guy who wrote the minute manager (sorry can't think of he's name) to help them manage better. they mess up bad on money that was donated for a bad fire we had out here the money didn't go where it was suppose to. Any way I feel the red cross is very important to our country. Laural

Gaul and Mary Pat Flaherty Washington Post Staff Writers Sunday, November 11, 2001; Page A01 The American Red Cross collected hundreds of thousands of blood donations after Sept. 11 knowing that the blood could not be used for victims of the terrorist attacks. (Then why collect it? Why not ask people to wait to see what is needed?) After selling some of the surplus blood to hospitals, the Red Cross has begun to destroy thousands of pints that have outlasted their shelf life. Directors of several Red Cross blood centers said their sites may discard as many as 1 of every 5 donations and the national total could easily reach tens of thousands. (You sell what is given to you? Isn't that rather unfair? Especially in this situation?) The charitable outpouring offered an opportunity for the $2.5 billion-a-year organization to restock its depleted blood inventory. Although the Red Cross told the public that surplus blood would be frozen, it did not have the resources to freeze large amounts of excess blood, according to documents and interviews. (Again with the lies and more lies!!) The Red Cross, which is the nation's largest blood supplier, declined to answer questions about how much extra blood was collected. Spokesmen said the Red Cross kept collecting blood because it did not want to turn away donors and hoped to create a reserve in case of more terrorist attacks. They noted that every blood donation yields some lifesaving byproduct, such as plasma. The nonprofit Red Cross collects more than 6 million pints of blood annually and earns about $1.5 billion, or 60 percent of its revenue, by selling donated red cells, platelets and plasma to hospitals for more than $225 a unit. The Red Cross estimated that less than 10 percent of the donations will be discarded, but some of its blood-bank directors disputed that. They said the Red Cross collected at least 250,000 and perhaps as much as 400,000 extra pints in the month after the attack. ~~~~~~~ Why oh why can't they DONATE blood to hospitals that desperately need it?     2. Women in the Military By Janis Nark The first military women to arrive in Vietnam were nurses, in 1956. As the American presence in Southeast Asia grew, so too did the number of young women who served. In all, nearly eight thousand military women were there, along with thousands more who served in the civilian sector. Eighty-three percent of us were nurses, the rest held positions in special services, supply, air traffic control, cartography, the USO, American Red Cross, and many other jobs in support of our combat troops. We were all fairly young when we volunteered to serve our country. And many of us were woefully naive in believing our recruiters' promises, mainly that we could be stationed anywhere in the world that we wanted, and that Vietnam was "strictly voluntary." Still, when our orders arrived sending us to war, most of us believed in our hearts that we were needed, that what we were doing was important, and that it was our duty to go. We did our jobs, facing the perils of enemy fire, horrific heat and humidity, disease, insects, isolation, long work hours and sleepless nights. Then we managed to pull ourselves together, dab some perfume behind our ears, and do it all again the next day. We learned a lot about ourselves. We discovered our strengths, and tried to survive our weaknesses. We were ordinary young women trying to function in the most extraordinary of circumstances; dealing in life and death and seeking not just to survive, but to understand. We did the best we could with who we were and what we had. And daily we collected our memories, and stored them away someplace safe, out of our conscious minds where we thought, "I'll deal with this later." And after a year, we came home, back to "The World." In one plane ride we went from war to peace. In one year we had gone from childhood to irrevocable adulthood. We knew we had changed, that our lives would never be the same, and that we could never explain any of it to the folks back home. We couldn't, and we didn't. For as unacceptable as it was for the guys to talk about the war when they came home, no one wanted to acknowledge that young women had been there. Even as the Women's Movement was making its voice heard, the underlying message was clear: "nice girls wouldn't have gone to war." So we came home quietly, went back to our homes, our families, our jobs and never spoke about the war to anybody. Many of us quit nursing, and never knew why. Some of us had recurring nightmares, flashbacks, unexplained illnesses, depression, or abused drugs or alcohol. Many women applied themselves with a fury to school, attaining one degree after another, to work, rising to the top leadership positions in their companies, to their church, their social organizations, their families - anything to avoid the memories they had stored away "to think about later." The memories had created a deep impenetrable wound that needed to be healed. In 1982 the initial healing ground was laid, in the form of the Vietnam Veterans Memorial - The Wall. The women, just like men who had served, were drawn to it. The healing power of that sacred place is evident to all who have been there. We could go to The Wall, and mourn, and cry, and reach out for comfort if we chose, and yet it was so easy to be invisible there. Women simply weren't recognized as veterans. Then, on Veterans Day 1993 the Vietnam Women's Memorial is dedicated in Washington D.C. Thousands of women vets attend and we are overwhelmed. We lead the parade; the nurses, Red Cross workers, entertainers, women who worked in administration, logistics, and intelligence. The streets are lined with people applauding and crying. A vet sits high up in a tree yelling "Thank You! Thank You!" A man in a flight suit stands for over two hours at attention, saluting as the women pass by. People hand us flowers and hug us. One GI has a picture of his nurse taken "July 1964." He is trying to find her. We find each other. We know, at last, that we are not alone; that we are not crazy or paranoid, but that we have a lot of work to do in order to heal. We talk to each other and find comfort as well as pain in our words and our tears. Words and tears, that now, finally we share.     3. Young and newly married, I relaxed under a pecan tree on a hot Texas summer day, drinking iced tea and getting to know my new sister-in-law, Estelle. Not much older than I, but already the mother of three, Estelle seemed to me experienced and wise. "Get yourself some girlfriends, Lacerate," she advised, clinking the ice cubes in her glass. "You are going to need girlfriends. Go places with them; do things with them." What a funny piece of advice, I thought. Hadn't I just gotten married? Hadn't I just joined the couple-world? I was a married woman, for goodness sake, not a young girl who needed girlfriends. But I listened to this new sister-in-law. I got myself some girlfriends. As the years tumbled by, one after another, gradually I came to understand that Estelle knew what she was talking about. I remembered that she had said the word "girlfriends" with emphasis. As Iwent along,I discovered the subtle difference between friends and girlfriends. You go to work with friends, go to dinner with friends, go to church with friends, belong to clubs with friends. You send friends greeting cards. You need friends in your life;all girlfriends were once only friends. But a girlfriend is different. A girlfriend is not "just like a sister." Sisters have a distinct bond,sometimes good, sometimes bad. Sisters flow from family attachment; girlfriends choose each other. A sister also can be a girlfriend. As a thank-you to my sister-in-law and to the other girlfriends in my life, I offer this praise of girlfriends. Here is what I know about girlfriends: Girlfriends don't compete. Girlfriends bring casseroles and scrub your bathroom when you are sick. Girlfriends keep your children, and keep your secrets. Girlfriends give advice when you ask for it. Sometimes you take it,sometimes you don't. Girlfriends don't always tell you that you are right. Girlfriends might send you a birthday card, but they might not. It does not matter in the least. Girlfriends laugh with you and you don't need canned jokes to start the laughter. Girlfriends don't yammer about you behind your back. Girlfriends pull you out of jams. Girlfriends don't keep a calendar that lets them know who hosted the other last. Girlfriends will give a party for your son or daughter when they get married or have a baby in whichever order that comes! And girlfriends are there for you, in an instant and truly, when the hard times come. Girlfriends listen when you lose a job or a husband. Girlfriends listen when your children break your heart. Girlfriends listen when your parents' minds and bodies fail. My girlfriends bless my life. Once we were young, with no idea of the incredible joys or the incredible sorrows that lay ahead. Nor did we know how much we would need each other.I want to tell younger women to take my sister-in-law's advice. Get yourself some girlfriends. You are going to need them.

RELEASE: 01-85AR NASA WEBCAST TO HIGHLIGHT WORLD OF ROBOTS FOR HUD CENTERS Residents in federal housing developments will be able to learn about the robotics of today and tomorrow during a NASA Internet "webcast" next week, perhaps sparking the interest of young people in science and engineering. The webcast, scheduled for 6 p.m. EST Nov. 14, will reach hundreds of Department of Housing and Urban Development (HUD) "Neighborhood Networks" community technology centers across the country. The webcast will be rebroadcast at 9 p.m. EST on Nov. 14. The one-hour program, "NASA Robotics for Exploration and Discovery," is a general-interest session during which NASA experts will discuss the current and future uses of robots. People tuning in will be able to "learn, discover, hear and interact with their neighbors and their space agency," according to the program's producers. "It is clear from occupational outlook studies that NASA and American industry eventually will need many more roboticists than are being trained in our schools," said Tom Dyson, an engineer at NASA Ames Research Center in California's Silicon Valley. "While there clearly is no NASA employment implied by this session, it is possible that this kind of opportunity could launch a student toward thinking about a robotics career," he said. Dyson works on NASA's Learning Technology Project which is producing the robotics webcast. "This is a great opportunity for residents of HUD housing to be exposed to robotics," said Delores Pruden, director of HUD's Neighborhood Networks Program. "Youth, especially, will be able to see first-hand the importance of math and science. Both HUD and NASA benefit from this partnership, and we look forward to implementing future educational events together." The community technology centers, located on HUD multifamily properties, include computers hooked to the World Wide Web, and provide computer and job skills training and placement. Webcasts enable people to watch live video, listen to audio and interact in real time on the Internet with experts. Students who took part in previous robotics competitions will participate in the webcast. Some young people who formed teams to build, program and compete robots, one against the other, have been inspired to go to college and pursue science and engineering, according to the NASA engineers who were mentors. Although robotics is attracting a cross-section of young people, mentors are particularly encouraged by the enthusiasm of some youths who attend 'continuation' high schools. "Last year, students from San Jose's Foothill High School were leaders of the championship alliance of the 2000 FIRST Robotics Tournament in Orlando," said Mark Leon, Robotics Education Project manager for NASA. "Most of these students are of Hispanic or Asian heritage from a challenged social or economic status. Foothill's students are classified as 'youth at risk' because Foothill is a continuation high school. This spot is the last stop for students on their way out, or their last chance to get it together. In this case, the students not only got it together, but they have surprised the world." People are easier to control by slave masters if they believe there is only one life and that is it. The higher one's personal responsibility, the more control one has over the environment and other people. Roman joke. "Such is the belief of the Celts in reincarnation, that they will lend money against a promise of being repaid in the next life." In the Norse and Vikings religion, all theories in the afterlife are allowed, from immediate reincarnation to a long stay in the Spirit World, according to one's choice of Gods. The Hindu religion is strongly in favour of reincarnation, and thus they can have Living Gods. In the modern West, reincarnation is frowned upon and we have black magicians instead. The writer has picked up plenty of culture clashes with Hindus but never black magic. PREVIOUS INCARNATIONS. There does appear to be a complete reversal between lives. So ghastly does one's previous incarnation appear, that one would never accept a drink in a bar from him. The moral codes of one's last incarnation are liable to be the complete reverse of one's current incarnation. If the last incarnation breaks through, this can lead to some unexplainable behaviour. To get a picture of one's last incarnation, list all the attributes one hates most or is glad not to have. This will give a reasonable profile of one's last incarnation. Then one has to take responsibility for it or just live with it which can be the same thing. The more famous or notorious the last incarnation, the more suspect it is. The top of the reincarnation hit parade according to British psychiatrists used to be the Admiral Lord Horatio Nelson, hero of the battle of Trafalgar in 1815. It is glamorous to have a famous past life, but this can be self delusion and identifying with the heroes of the time. RETROSPECTIVE MORAL CODES. Legal liability ends with death. It is disastrous to judge one's last incarnation by present day moral codes, as they change with time. Sometimes particular moral codes go out of fashion, and then come back into fashion again. Judge all incarnations by the moral codes of the time, country and religion. Political correctness has no place in evaluating past lives. THE SPIRIT WORLD. This is a place for unfinished business. It is quite reasonable to stay around to protect one's wife, children and grand children. It is near impossible to contact a person immediately after death as they are too busy sorting out the things that they could not sort out while in body. It can take up to 6 weeks for a spirit to sort themselves out, during which time it is near impossible for a spiritualist medium to get a sensible message. Time in the Spirit World can be from near zero if there is no unfinished business to thousands of years. If the time is more than a 100 years can start to suspect that the spirit has become a non incarnating entity. The Pharaoh Tutankhamen was locked in to operate his own curse for 3,000 years, until the writer released him. This sounds a very stupid way to spend 3,000 years. The writer does not know what the Pharaoh is doing now but doubts whether it is anything described in the Egyptian Book of the Dead. A complaint made against Spiritualists, is that they contact cast off egos, shells and other debris and not spirit itself. There may be a little truth in this. THE NEXT INCARNATION. The greater one's responsibility, the more choice one has over the future. There can be choice to stay or not stay in the Spirit World. One can have choice of bodies and identities when one reincarnates. The villain and black magician have very little choice. If one can take responsibility for all actions in the current life and all concepts from past lives, then there is no need to reincarnate except by choice. One can become a non incarnating spirit. This is very much in line with Hindu and Buddhist philosophy. HAZARDS. Remembering past lives can be very useful if one is a science fiction or other writer. Past lives on other planets can be a great source of science fiction. Remembering past lives can give the flavour of the time, but is no substitute for hard research. Such is the current notoriety of the Acquired Memory Syndrome, that the British Institute of Psychiatry has recommended memories gained through psychotherapy should not be admitted as evidence in any court of law. It has been known for psychotherapists to tell their clients, "If you had been abused as a child, you would know all about it and would not need my help to remember". If someone in authority says that we were all frozen inside ice cubes and dropped from outer space into an Earth volcano, then some people are bound to "remember" this. After one has taken responsibility for one past life murder, the next dozen are quite easy to handle. If one has taken responsibility for all past lives in a previous existence, then memories of past lives will not be available. When looking at past lives, the scenery is immaterial. If one poisoned someone else in a past life, it does not matter if both villain and victim were British, Chinese or both ETs of the same race. The principle is all important and choose the best available or logical scenery. If one believes themselves to be the victim in a past life incident, then one must take responsibility for being the villain and not the victim, as the roles are reversed in a hidden incident. Passed lives are for one's personal use only and should not be inflicted on people other than psychotherapists. Looking at one's last life is fine. Accurately cataloguing one's past 10 lives is suspect as one is liable to get all the detail and miss the concepts behind them. Taking responsibility for concepts is more important taking responsibility for the detail and scenery. If one can take responsibility for the concepts, then there is no need to remember the detail, and one is unlikely to remember the detail anyway. Trying to verify details of past lives by research can be a fool's game, as one is probably missing on concepts and responsibility. Immortality is not much use to bodies without eternal youth. Similarly there is no immortality for the ego (thank goodness) even if the Christian Church appears to offer it. If anyone claims infallible knowledge about incarnation and the times in-between, one can politely ask why they are still here on Earth. Consider the Great Pyramid of Giza. This is the oldest known building on Earth and is still the most accurately made. The engineering tolerances are to 1/100 inch whereas modern buildings are only built to a tolerance of 1/4 inch. It would be impossible to duplicate it today. Spirit guides tell us that we are learning and evolving. It could just be that we are in a state of entropy or devolution instead. His blood sugar was running so high his organs were shutting down when they hospitalized him. Thai cooks add a lot of fresh ingredients, for example coriander , lemon grass, basil leave, chillies, etc., and create our own unique cuisine. We use small portions of lean meat, poultry and seafood, and a lot of fresh vegetables which are quickly cooked so they are crispy, colourful, sharply flavoured and nutrition. ~*~ Cook with your tongue!! Thai cooking is very different than modern western cooking. Where in western cooking (particularly baking) ingredients are measured exactly, Thai cooking is much more lenient. While this flexibility makes recipes more forgiving, internalizing "the system" can be challenging. This site provides measurements, but you should look at these recipes as the starting point for your exploration. ~*~ 4 Flavors + Heat - In Thai cooking there are four flavors: sour, sweet, creamy and salty. Heat sits on top of the four flavors. The secret of a good dish is the right balance of the flavors -- you will find that there are "sweet spots" where the flavor just tastes right. ~*~ No Measuring - I remember that I had such a hard time learning to make a cake. Following the Thai tradition, I refused to kneel to Betty Crocker's specifications. Nobody uses measuring cups in Thailand. You learn to cook by watching and helping in the kitchen. After throwing away 8 cakes, I broke down and used measuring cups. It worked. ~*~ Personal Taste - You don't need add exactly what the recipe calls for. Rather, the recipe is a guideline - once you develop your personal taste, do not be afraid to deviate. Because the intensity of an ingredient's flavor can vary from one time to the next and everyone prefers a different point along the flavor spectrums, only your tongue can tell you how much more of something you need to add. Also, if you don't like something, omit it. Simple as that! ~*~ How to Eat The basic food is meat and vegetable over rice. Just like the five food groups with carbohydrate is on the bottom of the pyramid, you consume more rice than meat. You take a little bit of meat or vegetable and more of the rice and scoop them on your spoon. In the old days, people ate with their fingers. It is kind of funny that scooping rice with your fingers takes practice. With the western influence, Thais started eating with forks and spoons. Now, you use your fork to push food onto your spoon and eat off the spoon. When you are done, put your fork and spoon together on the plate. ~*~ Types of Dishes Many aspects of a Thai meal differ significantly from western meals. Appetizers: similar to western appetizers Main Courses: Dishes eaten with rice. Unlike with western food, there is actually no 1 "main course" in a meal. You will frequently have 1-3 different dishes per person that everyone shares. The main course can be subdivided into types of cooking: Yum: literally means to mix. Meat with herbs and spices, vegetable with spices, meat and vegetables with spices mix with sauce. Some sauces are sour and spicy, some are spicy and sweet. Gang Jeude: clear broth soup with vegetable or meat or both. Gang Ped or Gang: spicy broth with or without coconut milk. The majority of gangs use curry paste and coconut milk. Pud: vegetable or meat stir fried. Tod: pan fried or deep fried, (i.e. Tod Mun is fried fish cakes). Yang: grilled (i.e. Gai Yang is grilled chicken) Dessert: Majority of desserts are made of coconut milk, flour and sugar. There are three parts in making dessert. The first is the flavor of the dessert which could range from different types of flour to fruits. The second is the syrup which is sugar and water. The third part is coconut milk and a pinch of salt. Now, you can assemble you dessert. Some are served with crush ice and made a wonderful summertime dessert. ~*~ The basic cooking utensils in the Thai kitchen are the wok, saucepan and steamer. A Chinese-style wok can be certainly used for Thai stir-fried dishes and deep-fried ones. Most of households in Thailand use gas cooking, but it is out of the question in the West. An electric stove is accepted, however, the important point is to heat up oil in a wok for a minute until a light haze appears. Use medium heat when you begin adding up ingredients specified in a recipe. For boiled dishes such as Noodles soup, Kuai Tiao Nam, a deep saucepan is useful. For adding or removing ingredients, you can use a net spoon, or slotted spoon or sieve. A steamer is used for fish dishes, for example, steamed fish with ginger and steamed seafood curry, Haw Mok Talay. Thai traditional steaming method is wrapped food in leaves parcels. Banana leaves are standard for main dishes and desserts. Artichokes can be used for banana leaf cups, Kratong, as a substitute, when you cook steamed curry, Haw Mok. Preparation is one of most important features of Thai cooking, all ingredients should be cut small before cooking begins. Basic equipment for this stage includes a chopping board, small, medium and large kitchen knife, and a mortar and pestle. There are two kinds of mortar and pestle. One is made from rough stoneware mortar and wooden pestle. This type is for light work, for example making fresh papaya salad, Som Tam, or garlic mixture for marinating. Nowadays there is wooden mortar and pestle which is ensure of a break resistance, however, its price is considerably high. The second one is heavy-duty kind, both the mortar and pestle are made from granite, for pounding wet ingredients, such as curry pastes. Fortunately there are widely available of ready-made curry pastes which save you a lot of time and effort in preparation. ~*~ The following ingredients are essential for Thai Cooking. Most of them are available at Asian grocery stores. Bamboo Shoots: These are the edible shoots of certain bamboo plants, more widely available in cans. Rinse them under cold water after opening the can and store leftover shoots in the refrigerator in water that is changed daily. Keeps about 2 weeks. Basil Leaves: There are many varieties of basil. The most common are sweet and hot basil. Hot basil is stronger in flavor and very popular for stir frying with meat. Sweet basil is used in curry dishes and is easy to find fresh all year-round in many supermarkets. Chili Peppers: Fresh chili peppers come in red, green, and yellow; available in various sizes. The hottest are the very small chilies, and the larger ones are usually milder. Mature chilies are always red. Dried chili and ground dried chili are also used in some recipes. All chilies, fresh or dried, need to be handled with care. Wash your hands thoroughly after touching them and do not touch any part of your delicate skin since it can cause a great deal of discomfort. Chilli, Capsium annuum (Phrik) There are several varieties are available in Thailand. Fresh chillies come in red, green, and yellow and in various sizes. The smaller the chilli, the hotter it is. Green chillies are hotter than red ones of the same size. The seeds are the hottest part of the chilli. What made them hot is capsaicin concentrated in the seeds and inside membrances,. Therapeutic properties: Capsaicin, a biologically actives ingredient, is benefical to the respiratory system, blood pressure and heart. Other therapeutic uses include being a stomachic, carminative, and antiflatulence agent, and digestant. Hot chillies (Phrik Klee Nu) They are the hottest and also the smallest, being only about one centimetre long. If they are unavailable, Mexican Jalapeno Pepper is a good substitute. Phrik Chee Fa They are in bigger sizes than the above hot chillies. They are used in milder dishes, as well as garnishing Bell chillies (Phrik Yuak) Bell chillies are in light green and mild in taste. They are used in spicy salads, chill paste and stir-fired meat dishes. Dried chillies ( Phrik Haeng) They are fully riped red chillies dried either in the sun or by smoking. They are prepared by removing the seeds, soaking in water, and then pounding in a mortar. Ground Chillies ( Phrik Pon) They are dried and pan roasted before being ground. You can buy ready made ground chillies at many Asian stores. Ground chillies are used in spicy soups and in sauces. Warning: Wash your hands and nails thoroughly after handling them, and keep your hand away from face and eyes. Roasted Chili Paste (Nam Prik Pao or Thai chili in oil): is widely used in many recipes to enhance the spicy taste. It is made from dried chilies, dried shrimp, roasted shallots and garlic, tamarind juice, and vegetable oil. Available in small jars in Asian grocery stores. It can be kept in the refrigerator for a long time. Be sure that the spoon used to remove the paste is clean and dry. Chinese Leeks or Chives: are mainly used in Pad Thai and in some Chinese appetizers. Available in most Asian grocery stores and last only for 1 week in the refrigerator. Scallions can be substituted, if necessary. Chinese Parsley (also known as coriander or cilantro): The leaves, roots, and seeds are used, and each part has a unique flavor characteristic and use. The leaves are usually used for garnishing sauces, soups, and salads. The roots are simmered in clear soup broths and used in marinating meat by mixing with other spices. The seeds have a very strong taste and are usually mixed in curry pastes. Coconut: Coconut milk is used in curries and in seafood dishes, as well as in desserts and other sweet dishes. Available in cans, desiccated, powdered, and frozen. To make coconut from fresh coconut, crack the coconut into small pieces with a hammer, then remove the white meat with a small sharp knife. Place the pieces in a food processor with 1/2 cup of hot water. Blend well, then pour the mixture through a cheese cloth into a container. Gather up the corners of the cloth and squeeze out the remaining liquid. This is thick coconut milk and will usually be used first in many recipes. Repeat the same process by adding hot water over a given amount of coconut required by the particular recipe. This is the second coconut milk, which is less thick and creamy and is usually used after the thick coconut milk is used. The easy way out is to buy canned or frozen coconut milk at Asian food stores. Dried Black Mushrooms: available in small packets. The flavor of these mushrooms is distinctive. Before using, soak in warm or hot water for 15 to 20 minutes, then chop off the stems. Some dried mushrooms contain much sandy grit and need to be checked carefully after soaking. Fish Sauce (Nam Pla): This thin, translucent, salty brown sauce is a must in Thai cooking for which there is no substitute. Nam means water and pla means fish. It is made by salting down small fish that are packed in wooden barrels. The liquid that "runs off" is collected, cooked, and bottled as fish sauce. Although the odor is strong when uncooked, the flavor mellows upon cooking. Garlic: Thai garlic is smaller and more tender than in the West. It is usually peeled and finely chopped before use in most of Thai dishes. Chopped fried garlic can be purchased in Asian food stores. Jasmine Rice: supposed to be the most expensive rice in Thailand, it looks like long grain rice, has a sweeter taste and is more fluffy. To cook jasmine rice, rinse it, place in a pot, and fill with water to the top of the rice, plus one knuckle's length above (or 1 cup of rice with about 1-1/2 to 1-3/4 cups of water). Boil over high heat (cover almost completely) until the water is level with the rice and little tunnels appear on the surface. Cover completely with a lid and turn the heat down low. The rice needs to be cooked 8 to 10 minutes more. Kha (also known as galangal or laos): looks similar to ginger, but has lighter, flesh and a different flavor than ginger. It is available fresh in selected Asian grocery stores. Fresh kha can be frozen to make it last longer. It is also available in dried slices and in powder. Dried kha should be soaked in warm water for 5 to 10 minutes before using. Lemon Grass: has a distinctive lemony flavor. The usual preparation method is to bruise the lower parts of the stalk or finely chop it. Fresh stalks will last for 2 to 3 weeks in a refrigerator; they can also be frozen in a plastic bag. Chopped dried lemon grass is available in small packets. Magrood Leaves (also called Kaffir lime leaves): are roughly the same size and shape as the common lime, but have dark green, glossy leaves. They are used for flavor in soups and curry dishes. Fresh magrood leaves are not available in many markets, but dried leaves can be found in most of the Oriental grocery stores. Fresh leaves last for 2 to 3 weeks and can be put in a plastic bag in the freezer. Mung Bean Threads: Also commonly referred to as cellophane noodles, these are fine-dried noodles made from mung bean flour. They should be soaked for 15 to 20 minutes in warm water before using in a recipe. They have a transparent look after being soaked. Preserved Radish or Turnip: are often found whole or in slices in packages. They are salty and need to be rinsed before being finely chopped. Rice Noodles: in a variety of sizes, it is sometimes referred to as rice sticks. Before being used in a dish, rice noodles are usually pre-soaked in warm or hot water. Shallots: are a small, brown-skinned member of the onion family. They taste different from onions and should be used when recipes specify shallots. Straw Mushrooms: available in cans, they need to be rinsed in cold water before used. Look for "whole", not "broken", on the label. They need little cooking and can be cut in half if needed. Sticky Rice: Also called glutinous or sweet rice. A short grain rice, quite sticky when cooked, used in a number of Thai dessert recipes. This rice needs to be soaked in water overnight or for at least 3 hours, then cooked in a steamer. Tamarind: a tropical fruit which provides a subtle, sour flavor. Tamarind paste is available in small packages. To make tamarind juice, place the paste in a small bowl, then soak in hot water for 10 minutes. Squeeze by hand or a spoon and strain. Rice or white vinegars can be substituted in lesser amounts than ordinarily required for tamarind. Thai eggplants: vary in size and shape from a pea to a cucumber or grapefruit. Small ones are bitter and are used mainly in green curry dishes. Green peas can be substituted for these eggplants and may appeal more to Western taste. ~*~ The secret to great oriental dishes is ... the heat. Lets get cooking. Set your heat on med. - high to high. With a little oil in your wok, season and pre heat it. You'll know your ready to add your first ingredients when you just start to see the oil smoke. Do not wait until the local fire department shows up, start cooking as soon as you see the oil starting to smoke. Typically you will add meats first. You want the wok good and hot because it should sear the meats like a nice hot grill. This is what seals in the juices and keeps things tasty. A wok that is not hot enough will just "Boil" the meats causing tough tasteless food. Let the meats sit for 20 to 30 seconds, then begin to stir. Again you want a good sear on the meats. Within 1-2 minutes the meats should be cooked about half way through. Do not wait until your meats are cooked completely through. Add your vegetables and keep stirring. The wok should still be hot enough to get a good sizzle from the vegi's. Within the next minute the vegetables will change color slightly. You want them slightly seared on the outside, yet crisp on the inside. Add your sauces and spices, mix together well. If you add these to soon, you'll boil out their liquid contents and change the flavors dramatically. Plus, if you cook some super spicy foods, cooking the chili to soon will cause your kitchen to fill with the burning chili oils. This will empty out your house as you and your guest run for fresh air. De glaze you wok with some of you favorite stock. Usually 1/4 of a cup will do unless you like your foods real saucy. Serve it up! Notice how the whole process should not take more than 3 - 4 minutes. This is due to having everything ready and keeping the wok good and hot. Review: · Have all you will need, ready to go. · Season and Pre heat with a little oil. · add meats · add vegi's · add spices · de glaze · serve ~*~ Thai iced tea recipe Bring 6 cups of water to boil. Add 1-1/2 cups Thai tea to a large plastic pitcher and pour over the hot water. Stir well for about half a minute until the liquid is dark brown. Stain the tea into another pitcher using either a traditional Thai cloth tea strainer or a fine sieve. A large Melitta coffee filter would work also. Add sweetened condensed milk to taste. Stir well. Cool to room temperature. To serve, pour over a full glass of ice. Top with unsweetened condensed milk if desired. The resulting tea should be dull orange.
